
Steamed Garlic Prawns with Glass Noodles

Ingredients:
- 650 g Tiger prawns, butterflied
- 100 g Glass noodles, soaked in hot water and drained
- 40 g Minced garlic
- 4 tbsp Cooking oil
Garlic Sauce:
- 60 g Minced garlic
- 7 tbsp Angel Light Soy Sauce (First draw)
- 1 tsp Brown sugar
- ¼ tsp White pepper
- 2 tbsp Water
Garnish:
- Spring onions
- Bird’s eye chilli
- Arrange the soaked glass noodles onto a steaming platter, then place the butterflied prawns on the glass noodles and set aside.
- Heat up the oil and fry the 40 g minced garlic till golden brown. Strain the garlic crisps and leave the oil in the pan.
- In the same pan, toss in the 60 g minced garlic and fry for 30 seconds. Add in the water, brown sugar, white pepper and Angel Light Soy Sauce (First Draw), bring to a boil and turn off the heat.
- Spoon the garlic sauce mixture into the cavity of the butterflied prawns and steam on high heat for 5-6 minutes.
- Garnish with spring onions, bird’s eye chilli and the garlic crisps.
